5 Block Breakfast

3 x eggs – 3B
60g Grated Cheddar Cheese – 2B

60g Onion – 1/2B
150g Grape Tomato – 1/2B
200g Mushroom – 1/2B
115g Red Capsicum – 1/2B
150g Figs – 2 1/2B
1 1/2 Cups Rocket – calling this 1/2B

5 Macadamias – 5B

Sautee the vegetables together until the onion is caramelised and then remove. Mix the eggs with a dash of water and then add to the pan on moderate heat. Once the eggs start to form add the cheese, cook for 30 sec and then re-add veg on top with 1/2 the rocket. When the base is firm flip and cook for a further 30 sec. Serve with the figs and macadamias on the side, and remaining rocket.
